Office 2019 (for both Windows and Mac) is a one-time purchase and does not receive feature updates after you purchase it. Office 2019 includes a meaningful subset of features that are found in Microsoft 365, but it's not part of Microsoft 365.

I purchased a new MBP 15.4 in 3/2017. I have MSO for MAC Home & Student 2011 installed software. I upgraded my OS in 11/2017 from MACOSSierra 10.12.6 to MACOS High Sierra 10.13.1. My excel workbooks stopped working-i.e., not compatible. I downgraded my OS back down to MACOSSierra 10.12.6 so. “‘Word, Excel, PowerPoint, Outlook and Lync have not been tested on macOS 10.13 High Sierra, and no formal support for this configuration will be provided,’ Microsoft wrote in a support. I've had no problems with High Sierra and Office for Mac 2016. Also see the following from Microsoft Office support for macOS 10.13 High Sierra - Office Support. As of September 25, 2017, macOS 10.13 High Sierra is publically available for all Mac users to install. Office 2016 for Mac is fully supported on High Sierra.
According to Microsoft, “As of the Microsoft 365 for Mac November 2020 update, macOS 10.14 Mojave or later is required to receive updates to Word, Excel, PowerPoint, Outlook and OneNote. If you continue with an older version of macOS, your Office apps will continue to work but you will no longer receive any updates including security updates.”
If you can’t upgrade to a newer version of macOS or get a new Mac computer, Microsoft does mention that your apps will continue to work, it’s just that they will no longer be able to receive any updates for new features or security. If you don’t have any problems with using a potentially outdated piece of software, we suppose this isn’t really that big of a deal.
However, if you’re the sort that needs to be updated at all times for work or for school, then this could be an issue. It is a pity that High Sierra support is being dropped considering that it’s not that old (it was released in 2017), but it’s something you’ll have to take into consideration.

As we approach the release of macOS 11 Big Sur, Microsoft is preparing to shift its Office 365 support away from another older version of macOS. In an update to the Office 365 message center (via OnMSFT), Microsoft said:

This move stays in line with Microsoft's practice of supporting the latest three macOS releases with its Office 365 suite. Currently, those include macOS 10.13, 10.14, and 10.15. After the release of macOS 11 Big Sur, the oldest version supported will be 10.14.
Mac Os High Sierra Compatibility
As of the release of Big Sur, macOS will support both Intel and ARM-based Macs. Apple is expected to launch Macs sporting its own ARM-based chips later in 2020, and the company says Microsoft's Office apps are already running on ARM-based Macs.
